Whisk the 2 eggs in a mixing bowl. Add the cold water and continue whisking. Add entire box of potato latke mix and whisk until lump free. Add the CHA! by Texas Pete® and the dried chives and mix until fully incorporated.
Let the potato latke mixture sit for approximately 10 minutes at room temperature to thicken.
Heat griddle to medium-high heat. Use enough pan spray or olive oil to coat the griddle so the latkes don’t stick. Carefully spoon 1 heaping tablespoon of the spicy potato latke mixture onto the hot griddle. Cook the latkes approximately 2-3 minutes on each side until golden brown. Continue with all of the latke mixture until gone.
Garnish the latkes with a dollop of your choice of sauce. Serve as an appetizer or use as a side dish for many meals.
