    Texas Pete® Breakfast Wrap


    • 1/2 C Texas Pete® Medium Salsa, drained
    • 1/4 C Sour Cream
    • 8 Eggs
    • 1 tsp Texas Pete® Hotter Hot Sauce
    • 1 tsp Kosher salt
    • 1/2 tsp Black pepper
    • 1 1/2 tsp Unsalted butter
    • 1/2 C Cheddar cheese, thick shredded
    • 1/2 C Green peppers, diced, sautéed
    • 1/2 C Smoked ham, diced
    • 4 Flour tortillas, 12 inch


    YIELD: 4 wraps
    PORTION (Serving Size): 1 wrap

    1. In a small bowl, mix drained Texas Pete® Salsa and sour cream.
    2. Set aside.
    3. Whisk together eggs, Texas Pete® Chipotle or Hotter Hot Sauce, salt and pepper.
    4. Preheat a medium nonstick skillet over medium heat.
    5. Melt butter in skillet; and egg mixture and gently scramble until soft set.
    6. Add cheese and stir until cheese melts.
    7. Lay tortillas flat on work surface.
    8. Divide scrambled eggs evenly among tortillas, placing eggs along the bottom half of each tortilla.
    9. Top each with 1/4 of the ham, 1/4 of the salsa sour cream mixture and 1/4 of the sautéed green peppers.
    10. Starting at the bottom edge of the tortilla, gently roll like a burrito, tucking in the sides to form a rectangular wrap.
    11. Cut in half on the bias and serve.
