    Texas Pete® Fatz Mega Molten Turkey Meatloaf Burger

    Ingredients

    • 1 Tbsp. Olive Oil
    • 1 C. Sweet Onion, chopped
    • 1 1/4 C. Lean Ground Turkey
    • 1/2 Tbsp. Kosher salt
    • 1/2 Tbsp. Pepper
    • 1 Egg
    • 1/2 C. Bread Crumbs
    • 2 Tbsp. Texas Pete® Garlic Hot Sauce
    • 2 Tbsp. Butter
    • 2 Tbsp. Flour
    • 1 C. Chicken Stock
    • 2 Tbsp. Barbecue Sauce
    • 2 Tbsp. Texas Pete® Hotter Hot Sauce
    • 2 C. Red Onions, peeled, sliced 1/8 inch thick
    • 1 Burger Bun, buttered and toasted per sandwich
    • 1 Leaf Lettuce per sandwich
    • 2 slices Beefsteak Tomato, sliced Per Sandwich

    Directions

    Meatloaf

    YIELD: 4 sandwiches
    PORTION (Serving Size): 1 sandwich

    1. Heat olive oil in a medium sauté pan; add onions and cook over medium heat until translucent; set aside. 
    2. In a large bowl, combine turkey, salt, pepper, egg, bread crumbs, Texas Pete® Garlic Hot Sauce and sautéed onions.
    3. Spray an 8”x4” loaf pan with pan release.  Pat meatloaf mixture into pan; bake at 350 degrees Fahrenheit for 55 to 60 minutes, until center registers 180ºF.  Let rest in pan for 10 minutes.  Turn out onto cooling rack and let cool to room temperature.  Store refrigerated.

    (Alternatively, divide the raw meat mixture into 4 portions and form into burger patties;  refrigerate until ready to cook).

    Barbecue Gravy

    1. Melt butter in a small saucepan over medium heat; whisk in flour and cook for one minute.
    2. Whisk in chicken stock and simmer for 5 minutes.
    3. Add barbeque sauce and Texas Pete® Hotter Hot Sauce.
    4. Simmer until thickened and keep warm until ready to serve.

    Crispy Red Onions

    1. Preheat fryer to 350ºF.
    2. Bread onions using Fatz Calabash breading system.
    3. Fry onions for 2 ½ minutes or until crispy and golden brown. Transfer to paper towel lined sheet pans until ready to use.

    Sandwich

    1. Slice meatloaf into ¾” slices.  Using 2 slices per sandwich, heat meatloaf on flat top, about 3 minutes per side.   (Or cook each turkey burger patty until cooked through and center is 180ºF.)
    2. Place leaf lettuce on bottom bun; top with two tomato slices, meatloaf slices, ¼ cup barbeque gravy, ¼ cup crispy red onions and bun cap. Serve immediately.
