1 pound Fingerling Potatoes, cut into 3 pieces each
Kosher Salt to taste
2 tsp Rosemary, fresh, minced
36 pieces Texas Pete bacon, uncooked, cut into thirds (see recipe)
8 ounces Sour cream
1 Tbsp Texas Pete Garlic Hot Sauce
1 Tbsp Texas Pete Fiery Sweet Sauce
Directions
Preheat oven to 400 degrees.
In a medium sized pot filled with salted water, add potatoes and bring water to a boil. Once the water boils, cook potatoes until fork tender. Drain and let cool.
While potatoes are cooling, in small bowl combine sour cream, Texas Pete Garlic, and Sweet and Fiery Sauces and salt. Set aside.
Once potatoes have cooled, toss potatoes with salt and rosemary. Wrap one piece of bacon around the potato and use a toothpick to hold together. On a parchment lined sheet tray, cook the potatoes for 15 minutes and then flip. Cook for another 15 minutes until bacon is cooked and potatoes are soft.
Serve finished potato bites alongside spicy sour cream and enjoy!
