Cook the chicken wings according to the cooking instructions found on the package. While the chicken wings are baking, prepare the sauce.
Place a small sauté pan on high heat. Very carefully, place the ½ cup of rum into the pan and reduce the rum by ¾. Use caution, as the rum may ignite while reducing; it will be the alcohol evaporating. Once the rum has reduced by ¾, add the fresh, diced mango and the brown sugar to the pan. Cook just until the mango is heated through and the sugar is dissolved.
Place the rum and mango mixture into a blender and add the CHA! by Texas Pete®, butter and a pinch of salt and pepper. Pure the mixture until it is smooth. Pour the sauce into a mixing bowl.
When the chicken wings are fully cooked, remove them from the oven and place them into the mixing bowl with the sauce. Toss them together until the chicken wings are evenly coated on all sides.
Arrange the chicken wings on a serving platter and sprinkle them with the shredded coconut and enjoy.
