Mix rimming dust ingredients in a small bowl thoroughly. Store in an airtight container for later.
In a medium saucepan, bring cut beets and water to a boil. Cook until beets are tender.
Remove beets and bring beet water to a boil, add sugar and lime juice, boil until it reduces by half, and refrigerate until ready to use.
On a small plate, pour 2 Tbsp. lime juice, then on another plate pour rimming dust.
Rim a glass with dust. In a shaker with ice, pour margarita ingredients and shake until chilled.
Strain margarita in glass, add 1 ounce of beet simple syrup and garnish with a lime that has been coated with rimming dust.
