    Sweet CHAbanero Upside Down Ham & Brie Tarts

    These savory-sweet tarts bring together sliced ham, creamy Brie, and tangy gherkins, all sealed beneath golden layers of puff pastry and finished with a bold glaze of Texas Pete® Sweet CHAbanero Sauce. Baked until crisp and flipped for presentation, each tart is brushed with sauce and sprinkled with fresh herbs for a craveable, premium small plate that balances heat, sweetness, and richness. Ideal for upscale appetizers, brunch programs, or bar menus looking to impress.

    Ingredients

    • 1 each 17 oz. package frozen puff pastry sheets
    • 1 pound ham, sliced
    • 1 each 8 oz. brie wheel, sliced into 12 even pieces
    • 12 small gherkins or cornichons, rough chopped
    • 2 eggs, beaten
    • 3 Tablespoons flake salt
    • ¼ cup Texas Pete® Sweet CHAbanero Sauce
    • 3 Tablespoons dill, chopped
    • 3 Tablespoons chives, chopped
    • 3 Tablespoons parsley, chopped

    Directions

    1. Thaw and unfold the 2 sheets of puff pastry. 
    2. On a floured cutting board, cut each sheet into 6 even rectangular pieces (2 x 3 grid) for a total of 12 pieces. Move pieces to the fridge to keep chilled.
    3. Preheat an oven with 2 shelves to 350°F with convection. 
    4. Lightly grease 2 parchment-lined half-sheet trays with olive oil or nonstick spray. 
    5. Make 6 small stacks on each tray with torn pieces of ham. 1 pound of ham should evenly distribute between the 12 piles. Each pile should be a rectangular shape that is just a bit smaller in dimension than the cut pieces of pastry. 
    6. Finish each pile with a similar amount of sliced brie, and top with chopped gherkins.
    7. Remove the pastry from the fridge and place a cut piece on each stack of ham and cheese. 
    8. Press down on all four sides to bring the pastry in contact with the parchment. 
    9. Brush the tops of the pastry with egg wash and sprinkle with flake salt.
    10. Transfer to the oven and bake for 25 minutes, or until the pastry is crisp, golden brown, and has visible layers. 
    11. Remove from the oven and let cool for 2 minutes, then use a wide spatula to flip the tarts over. 
    12. Brush the inside and edges of each tart with Texas Pete® Sweet CHAbanero Sauce. 
    13. Garnish with a sprinkling of chopped herbs and serve with additional Texas Pete® Sweet CHAbanero Sauce on the side.
